S’mores Fudge Pie ... and Happy Birthday to Me!






















You are gonna loooove what I am about to share with you today!   It's for s'mores!   And not just your ordinary 3 ingredient s'mores you enjoyed as a scout 'round the campfire (4 if you count the stick holding the charred marshmallows).  No, Dear Reader, this is for S'mores Fudge Pie ...
courtesy of my Secret Recipe Club assignment, Mom's Test Kitchen by Jaime.  I knew I'd enjoy Jaime's blog as soon as I spied her logo subtitle, What the Forks for Dinner?

Jaime is the mother of one cutie-pie kid.  She also has an amazing trove of very awesome and easy recipes.  There were a few healthy and sensible mains I mulled over, such as  Capellini Pomodoro with Italian Herb Chicken.  But then I remembered this-here post's Reveal Date ... by an amazing coincidence it just happens to be my own birthday!

The Pomodoro can wait for another day. I dove back into Jaime's file to come up with S'mores Fudge Pie instead.  If you rationalize consider that it contains:

Condensed milk! (milk ... very healthy!)
Chocolate! ... heart healthy!
Graham crackers! (originally created as a healthy food ... store-brand sugar-honey graham crackers not so much but work with me).
Marshmallows!  Okay, not healthy, but I'm celebrating here.  

No baking (unless you count a few seconds under the broiler) and just a short cooktop-time. By the way, it is abso-tively important to to stir stir stir the chocolate chips into the warming sweetened condensed milk until no lumps remain, in order to reward yourself with a lucsious silky truffle-like filling.

Be very sure to watch the marshmallows while under the broiler.  

Sometimes 10 short seconds is 10 too long.  Still yummy.




They go from almost done, almost done, SCORCHED in a blink of an eye.  In fact, don't do what I did ... when they look like they need a few seconds more, yank it from the broiler fast because they are DONE.

Now what could be better?

Oh, yeah, dinner out.  I'm thinking a cup of tomato soup (yes, even in the summer), a half-size portion of salmon with a sidecar of broccoli, all washed down by a glass of wine (or two) ... then afterwards heading back home.





















Because my favorite part of dinner is ... dessert!

S’mores Fudge Pie
Adapted from Mom's Test Kitchen
YIELD: 1 pie (8 family or 12 polite guest servings)


1 9 inch graham cracker pie crust, unbaked (purchased or easy scratch version)
1-1/2 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
1 cup mini-marshmallows

In a small saucepan over medium-low heat combine the chocolate chips and condensed milk.

Almost smooth.





















Heat, stirring continuously until chocolate is completely melted.  Do not let boil. Remove from heat; pour filling into graham cracker crust; smooth top with a spatula. Place in fridge at least a half hour to allow filling to cool down and to firm up.

Preheat broiler.  Remove pie from the fridge; cover top of pie with marshmallows.

Place pie under broiler  until marshmallows turn light golden brown, 30-60 seconds (don't take your eyes off marshmallows, they can scorch fast!).






















Return pie to fridge at least an additional hour before serving. Pie is easier to cut when chilled. Slice into 8-12 servings. Transfer to dessert plates; allow to soften for 10 minutes, then serve.

  2. Well, happy birthday you. And I couldn't possibly think of a better way to celebrate than with a slice of this amazing looking pie, which as you have so rightly pointed out is really verging on health food. At the very least its healthy for the soul :-)
