This month's Kosher Connection theme is (are?) drinks. I have a low tolerance for alcohol (my limit is around zero), so I usually drink ginger ale. Unless a cosmopolitan is available.
True story: at our wedding a million years ago, theHubby "plied" me all evening with doubles ... of ginger ale garnished with lime wedges.
Since the combination resembled a boozy substance, several people actually pulled him aside in an attempt to slow down my "drinking."
I recently discovered the Bellini. This cocktail was invented 70-80 years or so ago in Venice, Italy. Named after the famous Italian painter Giovanni Bellini (an early Teenage Mutant Ninja Turtle who left the band before they became famous), the cocktail was made from fresh peaches and Prosecco (an Italian sparkling wine). The Bellini was an instant hit. While the original is still popular, nowadays it is also made with other fruits and sparking wines and liquors.
Getting back to Cosmos a second -- two of the ingredients are cranberry juice and lime juice. Which might be why I like this teetotaler version.
Apple-Cranberry Bellini - Easy
Yield: 4 servings
1 (25-ish oz.) bottle sparkling apple-cranberry juice
juice of 1 lime (approx. 4 teaspoons juice)
fresh cranberries, for garnish
1 thinly sliced lime cut into quarters, for garnish
Divide apple-cranberry juice among 4 champagne flutes. Top each with about 1 teaspoon of lime juice.
Garnish with a few cranberries and lime quarters, if desired. Serve immediately.
