Another smoothie sharing. This one's so simple you will want to enjoy a glass every day for the rest of your life. Or at least until peak strawberry season is over.
Can you believe that strawberries are super healthy? One serving has more vitamin C than an orange. Strawberries are also high in fiber, folic acid and antioxidants.
Of course we all know about the health benefits of yogurt. Aside from loads of calcium and protein, its good bacteria aids in digestion and boosts immunity.
Chia seeds are another super food fad, but this one is legit. They aren't new, having been around since the time of the Aztecs. For such a tiny seed, they pack a lot of health-punch. They are a whole grain food, high in fiber, calcium and antioxidants. You practically glow with health just holding a box of chia seeds.
Just keep in mind that chia seeds absorb liquid, gelling whatever it is stirred into. So if you want to make this smoothie in advance, and by advance I mean like 15 minutes or more before serving, hold off on the chia. stirring some just before enjoying. Or else plan to hand out spoons instead of straws.
Strawberry Chia Smoothie
Yield: 2 servings
1 cup vanilla yogurt (regular or Greek)
1 cup whole of low-fat milk (add an extra 1/4 cup if using Greek yogurt)
1 1/2 cups cut-up strawberries (7 or 8 'berries)
2 Tbl. chia seeds, plus more for garnish
1 Tbl. fresh lemon juice
Place all ingredients in a blender. Process until smooth, 30-60 seconds.
Pour into 2 glasses and garnish with additional chia seeds, if desired, before immediately serving.
