Another holiday has pretty much slipped through my fingers yet again. According to that great repository of Mexican history, Wikipedia, Cinco de Mayo celebrates the victory of the Mexican army over French troops in 1862. It is not Mexican Independence Day, as many Americans believe, mostly because Mexican Independence Day is in September.
So why am I imparting this knowledge upon you, Dear Reader? Because it gives me yet another excuse torecycle hide behind produce another pile of recipes previously posted. Hopefully by next week I should be back into the swing of new recipes to share. Until then, join in with (it seems) everyone else and make a Mexican-inspired meal.
