Blueberry Pomegranate Smoothie - Easy



Welcome back to another installment of the Secret Recipe Club, where members select and make a recipe from an assigned blog. The blog chosen for me is The Spiffy Cookie. Isn't that a cute name? If you think the name is adorable, you should check out Erin's logo.  I almost want to hug it!





Erin and I have several things in common (besides being carbon-based life forms).  We both think there is no such thing as too much education (she is a grad student working towards a PhD in Biomedical Sciences, and I have a couple of masters degrees). But more importantly, we both believe dessert is the best part of a meal.

Speaking of dessert, the recipe I selected is dessert disguised as breakfast.  I posted a similar smoothie recipe a while back, but Erin's contains three different fruits.  Her version is health in a glass.  And if you choose your yogurt wisely, it's even gluten-free!



















Instead of ice cubes, Erin's recipe uses frozen berries.  She suggests that if you only have fresh in the fridge, pop a cup of the berries into the freezer the night before.  That was a great suggestion, because sometimes I have blinders on my brain and would have thought, gee, I only have fresh blueberries, I better head over to the Try-N-Save and pick up a bag o'frozen.
 
Erin's recipe uses pomegranate juice.  I subbed with pomegranate molasses mixed with water because that's what I had in the fridge.  Oh, and after making a batch and enjoying it immensely, only then did I notice I forgot to add the honey.  So I demoted it to optional.  Taste the finished product.  If your blueberries are sweet, you might want to do "accidentally" forget the honey, too.

Blueberry Pomegranate Smoothie - Easy
Slightly adapted from The Spiffy Cookie 
Yield: 1 large serving

1 cup frozen blueberries
1/2 banana, cut up
1/4 cup plain Greek yogurt (low-fat or fat-free)
1/4 cup pomegranate molasses
3/4 cup water
1 Tbl. honey (optional)


Place all ingredients except honey in a food processor or blender.  Process until well combined.   Taste and add honey if needed and/or desired.








Pour into a tall glass and pop in a wide straw.

Serve immediately.

I had erin's blog at the spiffy cookie before, loved her blog! This smoothie looks great, I love just throwing in a bunch of random fruits that I have in the fridge and hoping for the best that it tastes good, but I definitely need to buy some pomegranate and try this combo out!

Great looking smoothie, and what I love even more about it is that it uses pomegranate molasses! Yeah, I have a bottle and always searching for new ways to bring it to play... :-)

Oh yum! I love smoothies year round. In the summer to stay cool, in the winter to make sure I get my fruit in for the day.

Oh, yum! I almost chose a smoothie recipe for my SRC pick today, too, but opted for a less-healthy decadent treat in the end. I'm such a smoothie fan + I know i'd love this one!
